Who is this qualification for?

By law, food business operators must ensure that food handlers receive the appropriate supervision and training in food hygiene.


This qualification is suitable for those working in a catering environment who are responsible for handling food. It is also the most popular food safety qualification accepted by enforcement officers and auditors.

How long will it take?

To complete this qualification learners should expect to undertake 7 hours of learning, typically over one day.

The qualification covers the following components:


  • Microbiological hazards

  • Contamination hazards and controls

  • Food poisoning and its controls

  • Personal hygiene

  • Design of premises and equipment

  • Cleaning and disinfection

  • Food pests and control

  • Food safety management from purchase to service

  • Food safety law and enforcement

Assessment method

This is by multiple-choice examination, in which candidates must demonstrate what they have learned.

Qualification outcome

A certificate will be awarded upon successful completion of the assessment. You will receive a Highfield Level 2 Award in Food Safety in Catering certificate which is advised to be refreshed after three years.
